- 2 cans whole kernel corn, drained
- 2/3 c. evaporated milk
- 1 beaten egg
- 2 Tbsp. finely chopped onion
- 1/2 tsp. salt
- dash of pepper
- 4 oz. processed Swiss cheese (shredded)
- 1/2 c. bread or cracker crumbs
- 1 Tbsp. melted oleo
Directions

1Combine corn, evaporated milk, egg, onion, salt, pepper and 3/4 cup cheese.

2Turn into 10 x 6 x 1 1/2-inch baking dish.

3Toss bread or cracker crumbs with melted oleo and the remaining cheese. Sprinkle over corn mixture.

4Bake in 350° oven 25 to 30 minutes. Garnish with green pepper rings.
