- 3 c. fresh cut corn (from 6 ears) or 1 (16 oz.) pkg. frozen whole kernel corn
- 2 beaten eggs
- 2 (5 oz.) cans (1 1/3 c.) evaporated milk
- 1/4 to 1/2 tsp. salt
- celery leaves (optional)
- 2 Tbsp. melted butter
- 1 1/2 c. shredded processed Swiss cheese (6 oz.)
- 1/4 c. finely chopped onion
- 3/4 c. bread crumbs
- sweet red pepper rings (optional)
Directions

1Cook corn.

2In medium mixing bowl combine eggs, 1 cup of cheese, evaporated milk, onion, salt and pepper.

3Stir in cooked and drained corn.

4Transfer mixture to a 9-inch quiche dish or 8-inch round baking dish.

5Place dish on baking sheet.

6Bake in 350° oven for 20 minutes.
