- 3/4 cup uncooked elbow macaroni
- 2 tablespoons chopped onion
- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- 1 cup fat-free milk
- 1 cup shredded Swiss cheese
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Directions

1Cook macaroni according to package directions. Meanwhile, in a small saucepan, saute onion in butter until tender. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.

2Add the cheese, salt and pepper. Drain macaroni. Add to cheese mixture; toss gently to coat.
