- 1 cup (2 sticks) unsalted butter
- 1/4 cup firmly packed dark brown sugar
- 1/4 cup granulated sugar
- 1/4 cup mild, light-colored honey, such as clover or wildflower
- 1 1/2 cup graham or whole wheat flour
- 1 cup all-purpose flour
- 1 teaspoon kosher salt
- 1/2 teaspoon ground cinnamon
Directions

1In the bowl of an electric mixer, cream the butter, sugars, and honey until smooth.

2In a medium bowl, combine the flours, salt, and cinnamon.

3Add the dry ingredients to the mixer bowl and beat until the dough just comes together.

4Wrap the dough in plastic wrap and pat it into a disk.

5Chill the dough in the refrigerator for at least 1 hour and up to 2 days.

6Preheat the oven to 325 degrees.

7Lightly grease 2 baking sheets or line them with parchment paper.

8Turn the dough out onto a lightly floured surface, and roll it into a 12-inch square.

9Use a knife to cut the dough into 2-inch squares.

10Carefully transfer the squares to the prepared baking sheets, spacing them evenly apart, and prick them all over with a fork.
