- 1 c. bulgur wheat, rinsed
- 2 c. boiling water
- 2 c. diced tomatoes
- 1 c. finely cut green onions
- 1 clove garlic, minced
- 1/3 c. chopped green pepper
- 1/2 tsp. dried basil, crumbled
- 2 tsp. dried mint flakes, crumbled
- 1 c. finely cut parsley
- 1/2 c. olive oil
- 1/2 c. lemon juice
- 1/4 tsp. pepper
- 1 tsp. salt or to taste
Directions

1Place bulgur in medium bowl and pour boiling water over it. Allow to sit for at least one hour to absorb moisture.

2Drain bulgur.

3Turn into large bowl.

4Add remaining ingredients.

5Cover and chill for 24 hours.

6Good with pita bread.
