Ingredients

  • 1 c. bulgur wheat, rinsed
  • 2 c. boiling water
  • 2 c. diced tomatoes
  • 1 c. finely cut green onions
  • 1 clove garlic, minced
  • 1/3 c. chopped green pepper
  • 1/2 tsp. dried basil, crumbled
  • 2 tsp. dried mint flakes, crumbled
  • 1 c. finely cut parsley
  • 1/2 c. olive oil
  • 1/2 c. lemon juice
  • 1/4 tsp. pepper
  • 1 tsp. salt or to taste

Directions

    Place bulgur in medium bowl and pour boiling water over it. Allow to sit for at least one hour to absorb moisture.

    Drain bulgur.

    Turn into large bowl.

    Add remaining ingredients.

    Cover and chill for 24 hours.

    Good with pita bread.
