  • 2 bunches parsley, stems removed
  • 4 tomatoes, seeded & diced
  • 4 green onions, minced
  • 10 fresh mint leaves, minced
  • 1 1/2 lemons
  • 1/4 c olive oil
  • salt & pepper to taste

Directions

    Dice everything. Salt the tomatoes, pepper the onions, throw it all in a bowl, add dressing, stir, & season to taste. Easy & really good.
