- 1/2 c. bulgur (wheat)
- 3 ripe tomatoes, peeled and chopped
- 1 c. finely chopped parsley
- 1 c. finely chopped green onions
- 1/2 c. fresh lemon juice
- 1 tsp. salt to taste
- 2 Tbsp. finely chopped mint (in season)
- freshly ground pepper to taste
Directions

1Pour boiling water over the wheat to cover generously and let sit for 10 minutes.

2Pour off excess liquid.

3Add tomatoes, parsley and onions; mix well.

4Combine lemon juice, salt, oil, mint and pepper.

5Pour over the vegetable mixture.

6Toss lightly and refrigerate until ready to serve.
