Ingredients

  • 2 c. bulgur wheat
  • 2 c. cold water
  • 1 c. chopped parsley
  • 1 c. chopped green pepper
  • 1 c. minced green onions (including tops)
  • 1/2 c. minced, fresh mint leaves or 2 Tbsp. dry mint
  • 1/2 c. olive oil
  • 1/2 c. lemon juice
  • 2 c. peeled, diced tomatoes

Directions

    Combine bulgur wheat with cold water and allow to stand for at least an hour to absorb moisture.

    Then combine bulgur wheat with parsley, chopped green pepper, minced onions, mint and tomatoes. Stir together oil and lemon juice; pour over wheat and mix well. Add salt, if desired (1 teaspoon).
