Ingredients

  • 1 c. medium cracked wheat
  • 1 bunch long green onions, diced (greens, too)
  • 1 bunch parsley, diced
  • 3 tomatoes, diced
  • 1 lb. can chick peas, drained
  • juice of 2 large lemons
  • 1/2 c. olive oil
  • salt and pepper to taste
  • 1 Tbsp. dried mint or 1/2 c. fresh mint
  • 2 cloves garlic, crushed

Directions

    Soak cracked wheat in warm water for 1/2 hour.

    Drain wheat; add remaining ingredients.

    Let stand for 1 hour.
