- 2 tomatoes
- 1 cucumber
- 3 green scallions
- 1/3 c. wheat or white bulgur
- 1/2 c. olive oil
- juice of 2 lemons
- salt and pepper
- romaine lettuce
Directions

1Soak the bulgur in lemon juice for 1/2 an hour.

2Chop all the first 4 ingredients very fine.

3Mix all together.

4Add olive oil, salt and pepper to taste.

5Serve with romaine lettuce!
