Ingredients

  • 1 c. bulgur wheat (preferably Shiloh Farms brand)
  • 1 1/2 c. hot water
  • 2 pt. cherry tomatoes, halved
  • 3 medium cucumbers, peeled and diced
  • 1 c. chopped Vidalia or red onion
  • 3 cloves garlic, chopped
  • 2 c. chopped parsley
  • balsamic or a good wine vinegar
  • really good olive oil
  • salt and newly ground pepper

Directions

    Pour boiling water over bulgur; zap in microwave for 10 minutes in a ceramic bowl.

    If you don't microwave, you can cook it on your stove top, letting it simmer for 20 minutes.

    After cooking, let the bulgur cool to room temperature.

    Add vinegar and salt to taste.
