Ingredients

  • 1 c. dry bulgur wheat
  • 1 1/2 c. boiling water
  • 1 1/2 tsp. salt
  • 1/4 c. fresh lemon or lime juice (or both)
  • 1 heaping tsp. crushed fresh garlic
  • 1/2 c. chopped scallions, including greens
  • 1/2 tsp. dried or fresh mint
  • 1/4 c. good olive oil
  • pepper
  • 2 medium tomatoes, diced
  • 1 c. chopped fresh parsley

Directions

    Combine bulgur, boiling water and salt.

    Cover and let set 20 minutes.

    Add lemon juice, garlic, oil and mint.

    Mix and refrigerate 2 to 3 hours.

    Just before serving , add vegetables and mix gently.
