- 1 c. dry bulgur wheat
- 1 1/2 c. boiling water
- 1 1/2 tsp. salt
- 1/4 c. fresh lemon or lime juice (or both)
- 1 heaping tsp. crushed fresh garlic
- 1/2 c. chopped scallions, including greens
- 1/2 tsp. dried or fresh mint
- 1/4 c. good olive oil
- pepper
- 2 medium tomatoes, diced
- 1 c. chopped fresh parsley
Directions

1Combine bulgur, boiling water and salt.

2Cover and let set 20 minutes.

3Add lemon juice, garlic, oil and mint.

4Mix and refrigerate 2 to 3 hours.

5Just before serving , add vegetables and mix gently.
