Ingredients

  • 2 c. bulgur wheat
  • 2 bunches parsley
  • 2 bunches scallions
  • 4 tomatoes, diced
  • 3 lemons
  • 1 bunch mint
  • 1/2 c. olive oil
  • 1/2 tsp. cumin
  • 1/2 tsp. pepper
  • 1/2 tsp. salt
  • frozen peas (optional)

Directions

    Soak wheat for 10 to 12 minutes in cold water.

    Squeeze water out; place in refrigerator.

    Wash all greens; dry, slice and dice. Mix spices with juice of lemons and oil.

    Chop tomatoes.

    Add all ingredients to wheat; mix thoroughly.

    Serve with romaine lettuce, toasted pita bread, etc.
