  • 1 cup cracked bulgur wheat
  • 1 cup water
  • 1 cup diced tomato
  • 12 cup diced sweet onion
  • 1 14 cups fresh parsley, coarsely chopped
  • 14 cup mint, finely diced
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice (or more to taste)
  • 1 teaspoon salt

Directions

    Combine cracked wheat with water and let sit until all water is absorbed.

    Combine oil, lemon juice and salt.
