- 1 1/2 c. boiling water
- 1 1/2 tsp. salt
- 1/4 c. fresh lemon or lime juice
- 1 heaping tsp. fresh garlic, crushed
- 1/2 c. chopped scallions, including green
- 1/2 tsp. dried mint
- 2 medium tomatoes, diced
- 1/4 c. olive oil
- 1 c. fresh chopped parsley
Directions

1Combine bulgur, water and salt in a bowl.

2Cover; let stand 15 to 20 minutes, until bulgur is chewable.

3Add lemon juice, garlic, oil and mint.

4Mix thoroughly.

5Refrigerate 2 to 3 hours.
