  • 1 c. dry bulgur wheat
  • 1 1/2 c. boiling water
  • 1 1/2 tsp. salt
  • 1/4 c. fresh lemon or lime juice
  • 1 heaping tsp. fresh garlic, crushed
  • 1/2 c. chopped scallions, including green
  • 1/2 tsp. dried mint
  • 2 medium tomatoes, diced
  • 1/4 c. olive oil
  • 1 c. fresh chopped parsley

Directions

    Combine bulgur, water and salt in a bowl.

    Cover; let stand 15 to 20 minutes, until bulgur is chewable.

    Add lemon juice, garlic, oil and mint.
