  • 1 1/2 c. boiling water
  • 1 to 1 1/2 tsp. salt
  • 1/3 c. fresh lemon juice
  • 1/4 c. olive oil
  • 2 to 3 cloves garlic, crushed
  • black pepper to taste
  • 4 scallions, finely minced
  • 1 packed c. parsley, minced
  • 1/4 c. fresh mint, minced (1 to 2 Tbsp. dried mint)
  • 2 to 3 tomatoes, diced
  • lettuce, finely shredded
  • 1 c. beans (white or brown) *
  • 1 egg
  • 1 tsp. salt
  • 1/4 tsp. pili-pili (a very hot African red pepper) or any type of hot pepper substitute
  • 1 small onion, chopped finely
