- 1 c. cracked wheat
- 1 bunch green onions
- 6 tomatoes
- juice of 3 lemons
- 1 bunch finely cut parsley
- salt to taste
- 1/2 c. olive oil
- 1 bunch finely cut mint or 2 Tbsp. dried mint
Directions

1Chop parsley and mint, stems and all.

2Place cracked wheat in bowl; cover with warm water and allow to soak for 10 minutes.

3All vegetables should be finely chopped.

4Drain cracked wheat and squeeze the water out.

5Add to the vegetables.

6Mix lemon juice, oil and salt.

7Pour over the vegetables.

8Arrange on a bed of lettuce or serve as pita bread sandwiches.
