  • 1 c. cracked wheat
  • 1 bunch green onions
  • 6 tomatoes
  • juice of 3 lemons
  • 1 bunch finely cut parsley
  • salt to taste
  • 1/2 c. olive oil
  • 1 bunch finely cut mint or 2 Tbsp. dried mint

Directions

    Chop parsley and mint, stems and all.

    Place cracked wheat in bowl; cover with warm water and allow to soak for 10 minutes.

    All vegetables should be finely chopped.

    Drain cracked wheat and squeeze the water out.

    Add to the vegetables.

    Mix lemon juice, oil and salt.

    Pour over the vegetables.

    Arrange on a bed of lettuce or serve as pita bread sandwiches.
