  • 1 pound Extra Lean Ground Beef
  • 1 package Taco Seasoning Mix, 1 Ounce Packet
  • 2 whole Small Low Carb Tortillas (such As Mission Plus)
  • 1 can (16 Oz. Size) Fat-Free Refried Beans
  • 1- 1/2 cup Salsa
  • 2 cups Reduced-fat Cheddar Cheese

    Brown 1 pound of lean ground beef in a skillet over medium-high heat until meat is browned.

    Drain grease.

    Leave the meat in the skillet.

    Add 1 packet of taco seasoning and 1/2 cup of water.

    Simmer over medium heat for 5 minutes.

    Put the ground beef mixture in the bottom of a casserole dish in an even layer.

    Take 2 small tortillas and cut them into smallish pieces (I use these low carb ones) and layer on top of the meat.

    Next take a can of refried beans (I use the fat free version) and spread over the tortilla layer.

    Next, add a layer of salsa.

    Cover the whole thing with a nice layer of cheese, I like to use a 2% milk Colby Jack.

    Bake at 350F for 20-25 minutes.

    Remove from the oven and let sit at least 5 minutes before cutting into it.

    Serve with some light sour cream and some fabulous guacamole.
