Ingredients

  • 1 1/3 c. hot water
  • 3 Tbsp. margarine, cut in pieces
  • 3 c. cornbread or chicken flavored stuffing mix
  • 1 lb. lean ground beef
  • 1 Tbsp. chili powder
  • 1 (8 oz.) can kidney beans, drained
  • 1 (8 oz.) can tomato sauce
  • 1 (8 oz.) can whole tomatoes
  • shredded lettuce, cheese, olives, chopped tomatoes and tortilla chips (garnishes)

Directions

    Mix water and margarine in large bowl until margarine is melted.

    Stir in stuffing or cornbread just to moisten; set aside. Brown meat; stir in chili powder, beans, tomato sauce and tomatoes.

    Bring to a boil.

    Reduce heat to low; simmer 5 minutes. Spray dish with Pam.

    Pour into a 12 x 8-inch dish.

    Spoon stuffing evenly over top.

    Bake 25 minutes until heated through. Garnish as desired.
