  • 1 tablespoon vegetable oil
  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 1 (10 1/2 ounce) can consomme
  • 12 cup white wine
  • 1 (6 ounce) can tomato paste
  • 1 tablespoon chili powder
  • 1 12 teaspoons cumin
  • 12 teaspoon salt
  • 4 dashes Tabasco sauce
  • 0.5 (9 ounce) bag tortilla chips
  • 34 cup grated cheddar cheese
  • 2 cups shredded lettuce
  • 2 tomatoes, sliced
  • 4 green onions, sliced

Directions

    Oven at 350 degrees.

    Brown the beef, chopped onion and the garlic in oil in a large skillet.

    Add the tomato paste and cook for a minute or two.

    Add the consomme, wine, chili powder, cumin and 1/2 teaspoon salt.

    Bring to a boil, reduce heat and simmer for 5 minutes.

    Add the corn.

    Mix well and pour into a 10x7 baking dish.

    Stick the tortilla chips into the mixture.

    Bake for 20 to 25 minutes.

    Top with the shredded cheese, lettuce, sliced tomatoes and green onion.
