Taco Stuffed Peppers

  • 1 lb. ground beef
  • 1 (1 1/4 oz.) pkg. taco seasoning mix
  • 1 (8 oz.) can kidney beans or chili beans (I use large can)
  • 1 c. salsa
  • 4 to 6 medium green peppers
  • 1 medium tomato
  • 1 c. grated Cheddar cheese
  • sour cream

Directions

    Brown and drain beef.

    Add taco seasoning, beans and salsa. Bring to boil; simmer 5 minutes.

    Cut peppers in half lengthwise; clean.

    Blanch 3 minutes; drain.

    Spoon meat mixture in peppers. Place in a 13 x 9-inch pan.

    Cover; bake at 350° for 15 to 20 minutes.

    Top with tomato, cheese and sour cream.
