- 6 baking potatoes
- 1 lb. ground beef
- 1/4 c. shredded carrot
- 1/4 c. sliced green onion
- 3/4 c. water
- 1/2 (6 oz.) can (1/3 c.) tomato paste
- 2 tsp. chili powder
- 1/2 tsp. dried oregano, crushed
- 1/8 tsp. garlic powder
- 3/4 c. shredded lettuce
- 3/4 c. dairy sour cream
- 1/3 c. shredded Cheddar cheese
- 1 1/2 c. taco sauce
Directions

1Prick potatoes with a fork.

2Bake in a 425° oven for 40 to 60 minutes or until tender.

3Meanwhile, in a 10-inch skillet, cook ground beef, shredded carrot and sliced green onion until meat is browned and vegetables are tender.

4Drain well.

5Stir in water, tomato paste, chili powder, oregano and garlic powder.

6Bring to boiling; reduce heat.

7Cover and simmer for 15 minutes.
