- 8 eggs, beaten
- 1/2 c. shredded Cheddar cheese
- 2 Tbsp. finely chopped onion
- 2 Tbsp. finely chopped green pepper
- 1 to 4 drops hot pepper sauce
- 1/2 c. leftover cooked taco-seasoned ground beef
- flour or corn tortillas
- picante sauce
Directions

1In a bowl, combine eggs, cheese, onion, green pepper and hot pepper sauce.

2Cook and stir in a nonstick skillet until eggs begin to set.

3Add taco meat; cook until eggs are completely set. Spoon onto warmed flour or corn tortillas and roll up; top with picante sauce.

4Yield: 4 servings.
