  • 1 c. chopped onion
  • 1 clove garlic
  • 1/4 c. salad oil
  • 1 (8 oz.) can tomato sauce
  • 1 c. water
  • 1 to 2 Tbsp. chopped jalapeno chilies
  • 1 tsp. oregano
  • 1/4 tsp. ground cumin
  • 1 lb. ground beef
  • 1 pkg. prefolded corn tortillas
  • 2 c. shredded lettuce
  • 1 c. chopped tomato
  • 1 c. shredded Monterey Jack cheese

Directions

    Place onion and garlic in a 1-quart ovenware casserole.

    Cook for 5 minutes or until onion is soft, stirring occasionally.

    Add salad oil, tomato sauce, water, jalapenos, oregano, 1/2 teaspoon salt and cumin to onion and garlic.

    Cover and continue cooking for 15 minutes.

    Place beef and 1 cup onion in 1 1/2-quart ovenware casserole.

    Cover.

    Continue cooking 6 minutes.

    Add 1/2 cup chili sauce.

    Heat tortillas 15 minutes.
