Ingredients

  • 4 cans black beans
  • 4 c. white rice
  • 3 to 4 slices bacon
  • 1 medium onion
  • 1 medium bell pepper
  • 1 pkg. taco shells (18)
  • 1 lb. hamburger
  • 1 pkg. taco seasoning
  • 1 (8 or 12 oz.) Cheddar cheese
  • 2 to 3 medium tomatoes
  • small amount chopped lettuce
  • 1 jar hot or medium El Paso picante sauce (optional)

Directions

    Open cans of black beans into a saucepan and add a little salt and pepper.

    Put on low heat.

    In a frypan, chop bell pepper, onions and bacon.

    Saute.

    Drain and put in the black beans and continue on low heat.

    Clean frypan and brown hamburger.

    Drain the hamburger and follow directions on taco seasoning.

    While that is cooking, cut tomatoes into small pieces.

    Shred cheese and chop or slice lettuce.

    Place taco shells in a 9 x 13-inch pan with 3 to 4 shells each row.
