- 1 lb. lean ground beef
- 1 medium, chopped onion
- 1 medium, chopped pepper (green)
- 1 Tbsp. shortening or Pam
- 1 (14 1/2 oz.) can tomatoes, chopped
- garlic salt
- 1 tsp. salt or less
- 1 tsp. chili powder
- 1/2 tsp. pepper
- 1 (17 oz.) can cream-style corn
- 3 c. cooked rice (1 c. uncooked; I sometimes use 3 c. cooked macaroni)
- shredded Cheddar cheese
Directions

1Brown beef, onion and green pepper in shortening; drain.

2Add tomatoes, garlic salt, chili powder, salt and pepper.

3Simmer 15 minutes, stirring occasionally.

4Add cooked, unseasoned rice or macaroni and corn.

5Mix well; pour into buttered 2 to 2 1/2-quart baking dish.

6Top with cheese.

7Cover and bake in 350° oven for 20 to 30 minutes.

8Yields 8 servings.
