Ingredients

  • 1 lb. lean ground beef
  • 1 medium, chopped onion
  • 1 medium, chopped pepper (green)
  • 1 Tbsp. shortening or Pam
  • 1 (14 1/2 oz.) can tomatoes, chopped
  • garlic salt
  • 1 tsp. salt or less
  • 1 tsp. chili powder
  • 1/2 tsp. pepper
  • 1 (17 oz.) can cream-style corn
  • 3 c. cooked rice (1 c. uncooked; I sometimes use 3 c. cooked macaroni)
  • shredded Cheddar cheese

Directions

    Brown beef, onion and green pepper in shortening; drain.

    Add tomatoes, garlic salt, chili powder, salt and pepper.

    Simmer 15 minutes, stirring occasionally.

    Add cooked, unseasoned rice or macaroni and corn.

    Mix well; pour into buttered 2 to 2 1/2-quart baking dish.

    Top with cheese.

    Cover and bake in 350° oven for 20 to 30 minutes.
