Ingredients

  • 1 lb. ground beef
  • 1 c. chopped onion
  • 1 c. chopped green pepper
  • 2 - 8 oz. cans tomato sauce
  • 1 1/2 c. whole kernel corn (12 oz. can)
  • 1/2 c. chopped olives
  • 1 clove minced garlic
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 2-3 tsp. chili powder
  • dash pepper
  • 6 oz. Sharp Cheddar cheese, shredded
  • 3/4 c. yellow cornmeal
  • 1/2 tsp. salt
  • 2 c. cold water
  • 1 Tbsp. butter or margarine

Directions

    Brown meat, onion & green pepper in large skillet until vegetables are tender. Drain. Stir in tomato sauce, corn, olives, garlic, sugar, 1 tsp. salt, chili powder & pepper.

    Simmer until thick (20-25 minutes). Add cheese. Stir until melted. Turn into greased 9x9x2 baking dish. Stir cornmeal & 1/2 tsp. salt into cold water. Cook, stirring constantly until thick. Add butter and mix well. Spoon over hot meat mixture. Bake in moderate oven (375°) about 40-50 minutes.
