  • 1 chicken or breasts
  • 1 1/2 c. yellow corn meal
  • 2 1/2 c. milk
  • 1 large can tomatoes
  • 1 can whole kernel corn
  • 4 eggs
  • 1 c. olive oil
  • 2 onions
  • 3 cloves garlic
  • 3 bell peppers
  • 2 Tbsp. chile
  • 1 c. olives
  • salt and pepper to taste

Directions

    Cook 1 whole chicken; take off bones.

    Cook corn meal and milk. Add tomatoes, corn and eggs.

    Fry onions, garlic and bell peppers in olive oil.

    Add chili powder, olives, salt and pepper.

    Mix all together and bake at 350° for 1 1/2 hours.
