  • 2 c. cornmeal (stone ground, if available)
  • 1 lb. lean ground beef or ground round
  • 1 small can tomatoes
  • 1 buffet size can ripe olives (pitted)
  • 2 onions, minced
  • 1 Tbsp. chili powder
  • 1/2 tsp. cumin
  • 1/4 lb. grated sharp Cheddar cheese
  • 1 qt. boiling water

    Add cornmeal while stirring to the boiling water.

    Put half the cornmeal in the bottom of a 2-quart buttered casserole.

    Spread meat mixture on top.

    Cover with the rest of the cornmeal mush.

    Top with grated cheese. Bake at 350° for 30 minutes.
