- 1 egg
- 1 cup (225 ml) milk
- 1 tbsp (15 ml) sugar
- 1 tbsp (15 ml) tapioca
- 1/8 tsp (1 ml) salt
- 1/2 tsp (2 ml) vanilla
- 2 tbsp (30 ml) sugar
Directions

1Separate the egg.

2Mix egg yolk, milk, sugar, tapioca, salt in sauce pan.

3Cook over medium heat, stirring constantly until mixture boils for 3 minutes.

4Cool, stir in vanilla.

5Beat egg white until foamy, beating constantly.

6Add remaining sugar a little at a time.

7Beat egg white until stiff.

8Fold beaten egg white into pudding.

9Chill and serve.
