  • 1 egg
  • 1 cup (225 ml) milk
  • 1 tbsp (15 ml) sugar
  • 1 tbsp (15 ml) tapioca
  • 1/8 tsp (1 ml) salt
  • 1/2 tsp (2 ml) vanilla
  • 2 tbsp (30 ml) sugar

    Separate the egg.

    Mix egg yolk, milk, sugar, tapioca, salt in sauce pan.

    Cook over medium heat, stirring constantly until mixture boils for 3 minutes.

    Cool, stir in vanilla.

    Beat egg white until foamy, beating constantly.

    Add remaining sugar a little at a time.

    Beat egg white until stiff.

    Fold beaten egg white into pudding.

    Chill and serve.
