Tapioca Rice Raisin Pudding

Ingredients
- 1 1/4 c. skim milk
- 1 egg, well beaten
- 1 c. cooked rice
- 1/4 c. sugar
- 2 1/2 Tbsp. tapioca
- 1/4 tsp. cinnamon
- 1 c. raisins
- 1 c. raisin juice
- 1 tsp. vanilla
Directions

1Soak raisins in enough water to make 1 cup of juice, overnight or a few hours.

2Mix all ingredients well, except vanilla.

3Let stand 5 minutes.

4Cook and stir on medium heat until mixture comes to a full boil.

5Pudding will thicken as it cools.

6Remove from heat.

7Stir in vanilla.

8Cool 20 minutes or more and stir.

9Serve warm or chilled.
