Ingredients

  • 1 whole Chicken Breast
  • 4 whole Garlic Cloves
  • 1 whole Onion
  • 1- 1/2 Tablespoon Kosher Salt
  • 20 pieces Corn Tortillas
  • 2 cups Canola Oil

Directions

    Clean the onion and the garlic cloves.
  2. 2
    In a pot, add the chicken, garlic cloves and onion (cut in half) and cover with water.
  3. 3
    Bring to a boil, skim off the foam and add salt.
  4. 4
    When chicken is done, remove the pot from the pan, remove the chicken from the pot, let cool slightly and then use a fork to shred.

    ( discard onion and garlic).

    Heat the tortillas in the microwave covered with a damp paper towel.

    I do 10 at a time for 1-2 minutes.

    They will be hot so please be careful.

    Place a bit of shredded chicken in center and roll to form a cigar shape.

    Once you have finished forming your tacos heat the oil in a skillet, fry them until golden brown, drain on paper towels and enjoy.

    These are great covered with green salsa and a dollup of sour cream.
