- 2 boneless skinless chicken breasts, cut into strips
- 1/2 cup butter, room temperature
- 1 cup extra virgin olive oil
- 2 cups fine breadcrumbs
- 1 garlic clove
- salt and pepper
Directions

1Season chicken strips with salt and pepper.

2Put butter and garlic in a microwave safe bowl, and microwave on high for one minute.

3Coat chicken with butter mixture, then coat with breadcrumbs;set aside.

4Heat oil in a non-stick frying pan over medium heat.

5Add chicken, and cook; about 3 to 4 minutes on each side.

6Transfer to paper towels to drain.

7Great served warm or room temperature.
