Ingredients

  • 1/4 c. olive oil
  • 1 large eggplant, diced
  • 1 onion, thinly sliced
  • 1 Tbsp. garlic, minced
  • 1 Tbsp. ginger, minced
  • 2 tomatoes, diced
  • 1 c. white vinegar
  • 1/2 c. molasses
  • 1/2 c. pineapple juice
  • 1 Tbsp. turmeric
  • 1 Tbsp. cinnamon
  • 3 to 6 shots hot sauce
  • salt and pepper

Directions

    In a large frying pan, heat olive oil and saute eggplant and onions until cooked through.

    Add tomatoes, garlic and ginger and cook another 2 to 3 minutes.

    Add remaining ingredients.

    Bring to boil.

    Reduce heat and simmer for another 5 minutes.
