- 1/4 c. olive oil
- 1 large eggplant, diced
- 1 onion, thinly sliced
- 1 Tbsp. garlic, minced
- 1 Tbsp. ginger, minced
- 2 tomatoes, diced
- 1 c. white vinegar
- 1/2 c. molasses
- 1/2 c. pineapple juice
- 1 Tbsp. turmeric
- 1 Tbsp. cinnamon
- 3 to 6 shots hot sauce
- salt and pepper
Directions

1In a large frying pan, heat olive oil and saute eggplant and onions until cooked through.

2Add tomatoes, garlic and ginger and cook another 2 to 3 minutes.

3Add remaining ingredients.

4Bring to boil.

5Reduce heat and simmer for another 5 minutes.
