Ingredients

  • 300 g pitted black olives
  • 6 anchovy fillets
  • 4 tablespoons capers
  • 1 garlic clove, chopped
  • 100 ml olive oil
  • 1 tablespoon lemon juice
  • 2 teaspoons Dijon mustard
  • 2 teaspoons tomato puree
  • 1 teaspoon chopped fresh thyme
  • 1 tablespoon of fresh flat leaf parsley
  • salt and pepper

    Place all the ingredients in a food processor and blend into a coarse paste.
