- 2 lbs pork tenderloin
- 4 tablespoons olive oil
- 2 tablespoons malt vinegar
- 1 12 tablespoons salt
- 1 tablespoon black pepper
- 2 tablespoons paprika
- 2 tablespoons coriander
- 2 tablespoons thyme
- 2 tablespoons rosemary
- 1 tablespoon cayenne
- 2 tablespoons butter
Directions

1Preheat oven to 500 degrees.

2Use 2 T of olive oil to coat oven-proof pan.

3Combine remaining olive oil and malt vinegar.

4Drizzle on tenderloin.

5Combine spices and herbs.

6Press into tenderloin on all sides.

7Roast tenderloin (uncovered) 15 minutes.

8Remove from oven.

9Rub about butter along length of tenderloin, let set for 5 minutes to set juices.

10Slice and serve.
