Ingredients

  • 1 cup water
  • 1 pinch salt
  • 1 lemon peel
  • 7 1/8 tablespoons margarine
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 4 eggs
  • sugar for sprinkling
  • cinnamon for sprinkling
  • oil for frying

Directions

    Bring the water, a dash of lemon, lemon peel, and margarine to a boil. Let boil for a few minutes, and then remove the lemon peel.

    Add the flour and baking powder all at once, and stir well until it forms a ball that separates itself from the pan. Let cook, stirring for 2 or 3 minutes.

    Remove from heat, and move to a bowl to cool down.

    When it is almost cold, mix in the eggs, one at a time, whisking very well between each addition. If necessary use an electric mixer.

    Heat the oil in a pan, or deep fryer. Place the dough in a pastry bag, and pipe strips of dough into the hot oil. When golden, remove from the pan, and coat in sugar and cinnamon.
