  • 1 c. butter
  • 2 c. sugar
  • 1 c. milk
  • 3 c. flour
  • 1 tsp. almond extract
  • 1 c. chopped, blanched almonds
  • 1/2 tsp. salt
  • 6 large egg whites

    Cream butter and sugar.

    Sift flour and baking powder together.

    Add to first mixture alternately with milk.

    Add well-floured nuts and almonds.

    Add stiffly beaten egg whites to which salt has been added.

    Bake in cupcake or mini cupcake pans at 350° for 20 to 25 minutes.
