- 1 egg white
- 1/3 c. sugar
- 3 Tbsp. Minute tapioca
- 2 c. milk
- 1 egg yolk
- 1 tsp. vanilla
- 1/2 c. teaberry candies
- Cool Whip (optional)
- coconut (optional)
- maraschino cherries (optional)
Directions

1Beat egg white until foamy; gradually beat in half the sugar and continue beating until mixture forms soft rounded peaks.

2Mix tapioca, remaining sugar, milk, egg yolk and teaberry candies in a saucepan.

3Let stand 5 minutes.

4Cook and stir tapioca mixture over medium heat until mixture comes to a full boil (pudding thickens more as it cools.) Gradually add to egg white mixture, stirring quickly, until just blended.

5Stir in vanilla.

6Cool 20 minutes.

7Stir.

8Serve warm or chilled.
