Ingredients
- 2 qt. water
- 1 lb. ham, diced
- 1 large onion, chopped
- 1 clove garlic, minced
- 1/2 to 3/4 tsp. salt
- 1 (16 oz.) can tomatoes, undrained and chopped
- 1 (10 oz.) can tomatoes and green chiles (optional)
- 2 c. 10 bean soup mix
Directions

1Sort and wash bean mix and soak overnight.

2Drain beans and add 2 quarts water and next 4 ingredients.

3Cover and bring to boil.

4Reduce heat and simmer 1 1/2 hours until beans are tender. Add rest of ingredients.

5Simmer 30 minutes, stirring occasionally.

6Yields 8 cups.
