  • 4-5 lb. pot roast
  • 2 c. tomato juice
  • 8-10 small onions
  • 8-10 stalks celery
  • 8-10 medium carrots
  • 8-10 potatoes, cut up
  • 1 large green pepper
  • lemon

Directions

    Put the meat in baking dish and pour tomato juice over it. Pierce the meat several times and let stand overnight.

    The next day put the roast in cooking bag and squeeze lemon juice over it. Season with 1 tsp. salt.

    Cook for 3 1/2 - 4 hours in the tomato juice until tender.

    After it has cooked, add the vegetables. Thicken juice for gravy if desired.
