Tex-Mex Cabbage

  • 1 medium cabbage
  • 2 Tbsp. sugar
  • 2 Tbsp. margarine
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 c. canned tomatoes, drained
  • salt and pepper to taste
  • 3/4 c. shredded Cheddar cheese

Directions

    Cut cabbage in small pieces. Cook about 10 minutes or until tender, but crisp.

    Put in greased casserole. Saute onion and green pepper in melted margarine; add sugar.

    Add tomatoes, salt and pepper.

    Pour mixture over cabbage.

    Sprinkle with cheese. Bake at 350° until heated thoroughly.

    Makes approximately 8 servings.
