- 4 c. self-rising cornmeal mix
- 16 oz. can cream-style corn
- 16 oz. carton dairy sour cream
- 2 c. sharp Cheddar cheese, shredded
- 11 oz. can Ro-Tel tomatoes, diced
- 1/4 c. vegetable oil
- 4 eggs, beaten
- 1/4 c. finely chopped red and green bell pepper and onion
Directions

1Heat oven to 400°.

2Mix all ingredients in large bowl and into a hot greased 9 x 14-inch pan.

3Bake 30 to 35 minutes or until golden brown (more golden than brown).
