  • 4 c. self-rising cornmeal mix
  • 16 oz. can cream-style corn
  • 16 oz. carton dairy sour cream
  • 2 c. sharp Cheddar cheese, shredded
  • 11 oz. can Ro-Tel tomatoes, diced
  • 1/4 c. vegetable oil
  • 4 eggs, beaten
  • 1/4 c. finely chopped red and green bell pepper and onion

    Heat oven to 400°.

    Mix all ingredients in large bowl and into a hot greased 9 x 14-inch pan.

    Bake 30 to 35 minutes or until golden brown (more golden than brown).
