- 1 c. yellow cornmeal
- 1/2 tsp. baking soda
- 3/4 tsp. salt
- 1 c. buttermilk
- 2 eggs, beaten
- 1 medium onion, finely chopped
- 1 (16 oz.) can cream-style corn
- 1 finely chopped jalapeno pepper
- Cheddar cheese
- 1 stick margarine, melted in 9 x 9-inch pan
Directions

1Stir all of the ingredients together until well blended, including the melted margarine.

2Pour half of the mixture into the 9 x 9-inch pan.

3Cover with a layer of Cheddar cheese.

4Bake at 350° for 45 minutes.
