Tex-Mex Deviled Eggs

Ingredients
- 6 hard-cooked eggs, peeled
- 1 Tbsp. finely chopped green onions
- 1 Tbsp. chopped fresh cilantro or parsley
- 1 small Serrano or jalapeno pepper, seeded and finely chopped
- 1/4 c. mayonnaise or salad dressing
- 1 tsp. prepared mustard
- 1/4 c. (1 oz.) shredded Cheddar cheese
- chili powder
Directions

1Cut the tips off both ends of each egg to create a flat surface for the eggs to stand on.

2Slice each egg in half crosswise. Remove yolks.

3Place in small bowl and mash.

4Add green onions, cilantro, Serrano or jalapeno pepper, mayonnaise and mustard. Blend well.

5Spoon about 1 tablespoon yolk mixture into each egg half.

6Top with cheese.

7Sprinkle with chili powder.

8Cover and store in refrigerator.
