Tex-Mex Deviled Eggs

Ingredients

  • 6 hard-cooked eggs, peeled
  • 1 Tbsp. finely chopped green onions
  • 1 Tbsp. chopped fresh cilantro or parsley
  • 1 small Serrano or jalapeno pepper, seeded and finely chopped
  • 1/4 c. mayonnaise or salad dressing
  • 1 tsp. prepared mustard
  • 1/4 c. (1 oz.) shredded Cheddar cheese
  • chili powder

Directions

    Cut the tips off both ends of each egg to create a flat surface for the eggs to stand on.

    Slice each egg in half crosswise. Remove yolks.

    Place in small bowl and mash.

    Add green onions, cilantro, Serrano or jalapeno pepper, mayonnaise and mustard. Blend well.

    Spoon about 1 tablespoon yolk mixture into each egg half.

    Top with cheese.

    Sprinkle with chili powder.

    Cover and store in refrigerator.
