- 12 ounces whole kernel corn, drained (canned)
- 1 large lemon, juice and zest of
- 2 tablespoons extra virgin olive oil
- 12 ounces Rotel Tomatoes, drained
- 1 -2 tablespoon fresh cilantro, chopped
- 1 lb chicken breast, cooked and cut into strips
- 2 green onions, chopped
- 2 cups cooked rice
- salt and pepper
Directions

1Mix black beans, corn, lemon juice and zest, olive oil, rotel tomatoes, cilantro, salt and pepper in medium bowl.

2Cover and refrigerate 30 minutes.

3Layer plate with rice, then grilled chicken.

4Top with black bean mixture and chives.
