  • 12 ounces black beans, rinsed and drained (canned)
  • 12 ounces whole kernel corn, drained (canned)
  • 1 large lemon, juice and zest of
  • 2 tablespoons extra virgin olive oil
  • 12 ounces Rotel Tomatoes, drained
  • 1 -2 tablespoon fresh cilantro, chopped
  • 1 lb chicken breast, cooked and cut into strips
  • 2 green onions, chopped
  • 2 cups cooked rice
  • salt and pepper

Directions

    Mix black beans, corn, lemon juice and zest, olive oil, rotel tomatoes, cilantro, salt and pepper in medium bowl.

    Cover and refrigerate 30 minutes.

    Layer plate with rice, then grilled chicken.

    Top with black bean mixture and chives.
