- 2 large potatoes, peeled and cubed
- 1 medium onion, finely chopped
- 1 medium green pepper, chopped
- 1 medium red pepper, chopped
- 2 to 3 Tbsp. butter or margarine
- 4 oz. ham, cubed
- 1 Tbsp. chopped green chiles
- 1/4 tsp. white pepper
- 1/4 tsp. cayenne pepper
- 1 can chicken broth
- 1 egg yolk
- 1/4 c. heavy cream
- 1/2 c. shredded Cheddar
Directions

1Boil potatoes until tender.

2Saute onion and peppers in butter until soft.

3Add ham, chiles, white pepper and cayenne.

4Cook 1 more minute.
