Texas Pecan Cake

  • 3 c. sugar
  • 1 lb. butter
  • 7 eggs, separated
  • 5 c. flour
  • 1 oz. lemon extract
  • 1 tsp. soda, dissolved in 1/4 c. warm grape juice
  • 4 c. chopped pecans
  • 1 lb. candied pineapple, chopped
  • 1 lb. candied red cherries, chopped
  • 1/2 lb. green cherries, chopped

Directions

    Cream the butter and sugar well. Add beaten egg yolks. Combine nuts and fruits with some of the flour and stir until coated.

    Add flour, a little at a time, to creamed mixture. Add extract and grape juice. Add fruit and nuts; fold in.

    Beat egg whites until stiff and fold in. Bake in well-greased tube pan at 250° for 4 hours or until done.
