- 1 cup butter
- 12 cup sugar
- 14 cup light brown sugar
- 1 egg yolk
- 1 teaspoon pure vanilla extract
- 2 14 cups flour
- 12 cup pecans, finely chopped
- sugar, for rolling cookies (optional)
Directions

1Cream butter and sugars until light and fluffy.

2Beat in egg yolk and vanilla.

3Stir in the flour, half a cup at a time, blending in well.

4Stir in pecans.

5Roll into 1-inch balls.

6Roll in sugar.

7Place on ungreased cookie sheets.

8Press with bottom of a glass to 1/8-inch thickness.

9Bake at 350 degrees for 10 minutes.

10Lower heat to 300 degrees.

11Bake cookies 12 minutes longer until just light brown on bottom.

12Cool a minute before removing to a rack to complete cooling.

13Store airtight.
