  • 3 c. milk
  • 1 c. yellow cornmeal
  • 1 Tbsp. butter
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 3 eggs, separated

Directions

    In a saucepan, scald milk to 180°; stir in cornmeal.

    Reduce heat; simmer 5 minutes, stirring constantly.

    Remove from heat; stir in butter, sugar, salt and baking powder.

    In small bowl, beat egg yolks; return all to pan and mix well.

    Beat egg whites until soft peaks form and fold into hot mixture until well blended.

    Pour into 8-inch greased baking dishes or divide into 6 French white individual bowls.

    Bake at 350° for 40 to 45 minutes or large bowl for 30 minutes or less for smaller bowls or until well puffed and golden.

    Use spoon to serve.
