- 3 c. milk
- 1 c. yellow cornmeal
- 1 Tbsp. butter
- 1 tsp. sugar
- 1 tsp. salt
- 1/4 tsp. baking powder
- 3 eggs, separated
Directions

1In a saucepan, scald milk to 180°; stir in cornmeal.

2Reduce heat; simmer 5 minutes, stirring constantly.

3Remove from heat; stir in butter, sugar, salt and baking powder.

4In small bowl, beat egg yolks; return all to pan and mix well.

5Beat egg whites until soft peaks form and fold into hot mixture until well blended.

6Pour into 8-inch greased baking dishes or divide into 6 French white individual bowls.

7Bake at 350° for 40 to 45 minutes or large bowl for 30 minutes or less for smaller bowls or until well puffed and golden.

8Use spoon to serve.
